Apparently there's a big game this weekend and some great commercials on tv... but I'm just in it for the snacks! Who is with me? Need a great recipe for the Superbowl this weekend? This cream cheese green chile dip is a favorite. A friend has made it for years for various gatherings and fellowships, but I tinkered with the original recipe a bit to make it lower in fat and calories... so everyone wins!

Here's what you'll need:
Lightened Up Cream Cheese Green Chile Dip Ingredients:
(2) 8 oz. blocks of reduced fat cream cheese (neufchatel cheese), softened
8 oz. bag shredded Italian cheese
1 cup light mayo
4 oz. can green chilies (or 7 oz. can if desired)
2-3 T. jarred diced jalapeno peppers
Breadcrumbs for topping
Serve with Wheat Thins, Triscuits, or Tortilla Chips
Note, disregard the pink fat free cream cheese in the photo. I originally tried this recipe with one FF and one LF block, and it wasn't good. ;) Stick with 2 low fat neufchatel cream cheese blocks. And if you're not concerned about the fat or calorie content, make it with regular cream cheese and mayo. Of course it's yummiest that way, but I honestly can hardly tell a difference between using full fat and low fat ingredients. Also, depending on your taste, you can use more green chilies- I prefer closer to the 7 oz. can for more green chile flavor. The jalapeno pepper amount is also flexible according to how spicy you want it- 2 T. is safe, 3 makes it hotter.
This recipe can be prepped and in the oven in less than 5 minutes! Once the cream cheese is soft, mix everything (except the bread crumbs) together well in a large bowl, then pour it in a 9x13 (ish) dish sprayed with nonstick cooking spray. Sprinkle bread crumbs on the top.
Pop it in the oven on 350 degrees for about 20-25 minutes, until the edges are bubbly and the top is golden brown.
For a twist from the norm, divide the mixture into individually sized serving dishes (I used ramekins) and cook them as previously directed. Fun idea for a party!
