There's lots of hype going on about the big game this week. Although I could almost care less about the game, my family enjoys the evening and I enjoy making some special snacks while they're watching the hoopla.
This is one of our all time favorite dips- for church fellowships, dinner appetizers, Christmas Eve snacks, VBS treats- everyone loves it! And, it couldn't be easier to make. There are only 4 simple ingredients that you probably already have on hand, and two of those are cheese. How much better can it get?
Here's what you'll need-
1 block of cream cheese, softened (low fat is ok too)
1 can of black beans, drained and rinsed
1 can of Ro-Tel tomatoes (I usually use regular, but Mild is all I had on hand)
8 oz. Cojac cheese
To assemble, spread the cream cheese onto the bottom of a pie-plate sized dish, or a 9x9 would work also. Then, layer the drained Ro-Tel, rinsed beans, finishing off with a layer of cheese on top. If you want to make a larger amount, use a 9x13 dish and double all of the ingredients.
But don't stop there... heat it up! Bake at 350 degrees for about 25 minutes until cheese is melted and edges are bubbly. Serve warm with tortilla chips.
I promise, this dip will be a TOUCHDOWN for whoever you make it for, and YOU'LL be the winner regardless of the score board. What's your favorite game snack food?

ReplyDeleteHowdy....they all look so yummy..I was at a family gathering over Christmas and my sister-in-law made one that was similar to the meatball recipe...thought I would send it along for all to try, as well as the one you shared. I bag of meatballs (she did use turkey but beef could be used), 1/2 jar peach preserves, 1 - 20 ounce can of pineapple chunks, 1 jar of sweet and sour sauce and a can of stewed tomatoes. She cooked this in a crockpot...Really, really good...

ReplyDeleteWe make this ALL the time too! It's a crowd pleaser! We cheat & just microwave it until heated through. 5mins or so I think. Also, I made your quiche last Sat and my family loved it!
